So, the boats due for a clean out.. Ep. 165

It’s been a good year since we’ve paid any REAL attention to La Vagabonde. Besides polishing the stainless, scraping the bottom when she gets a little molluscy and maintaining our equipment onboard, she’s usually keeps things fairly easy for us. But we are in need of a few installations and we are due for a new coat of antifouling. We decide to sail up the coast to Just Catamarans, a place well known for it’s legendary team and fast service.
We now have FANS YOU GUYS. There is an electric fan, in my room! Looking forward to the haul out in the coming days.

Ingredients

6 Tbsp olive oil

1 medium onion, chopped

3 garlic cloves, minced

2/3 cup fresh parsley

1 1/2 cups of fresh chopped tomato (out 1 medium sized tomato)

1 can crushed tomato

1 cube vegetable stock

1 1/2 white fish fillets of your choice, cut into 2-inch pieces

Medium sized bunch of chopped bok choy

Pinch of dry oregano

Pinch of dry thyme

Tabasco sauce to your liking, roughly about half a teaspoon (we make it more of a squirt, we like it hot!!)

Fresh ground lack pepper

Salt to taste

Method

  1. Heat olive oil in a large thick-bottomed pot over medium-high heat. Add onion and sauté 4 minutes, add the garlic and cook a minute more. Add parsley and stir 2 minutes. Add bok choy after you’ve let the onion and garlic saute for a while.
  2. Once the bok choy is fairly soft, but not completely cooked. Add fresh tomato, canned tomato, tomato paste and cube of veggie stock, and cook for 10 minutes or so giving it a few stirs.
  3. Add fish and simmer until the fish is cooked through and easily flakes apart, about 3 to 5 minutes. Add the oregano and thyme seasoning plus the salt and pepper to taste. Pop into some bowls to serve!

  5. Australia, New Zealand, Canada and Britain are trying to form some kind of free trade pack, so I think it would have been great if u guys could have come to Canada to have the little guy, instead of having him / her in that crazy warmongering county to our south.
    We also have a better health care system than the Americans.
    My own daughter is back home again and with a 2yr.old girl who has two passports now one Thai and one Canadian. Fortunately for Grandpa, she is going to remain here and so is her mom, due to her Thai dads decision to have a Thai girl friend on the side, I was very very disappointed with him as I really liked him.
    I have been following u two since your first meeting in the Med. what is it 4 yr’s ago now? I wanted to sail around the word too. but not bad enough I guess, but just turned 77 this past June and I have issues with my health that stops me from doing it now. Time has just gone by so fast, and so has the chance. I would have gotten a Catamaran for sure ! I had a 28′ Herreshoff ketch when I was 22, but wanted a bigger boat for the blue water crossings.

  6. Crazy war mongering country to your south? Seriously sir, I have served in our armed forces and have deployed to more than one war. I have also deployed with Canadian military, great guys and gals. Same heart as ours and same determination. We do pay more than out fair share for world protection and certainly much more than Canada.
    Our health care is obviously very expensive and has been made worse for the working class in the past numerous years, however, we provide free health care to many families that do not contribute to the cost of it. Please do your own research and not simply develope opinions from media hat has an agenda.
